Strawberry Mint Spritzer

Rinse the fresh mint leaves and strawberries under cold water, then pat dry with paper towels to remove excess moisture.

Hull the strawberries and slice them into quarters or halves, depending on their size, placing them in a large bowl.

Chop the mint leaves into very small pieces and add to the bowl with the strawberries.

Add the sugar, grated lime zest, and lime juice to the strawberry-mint mixture, then stir gently to combine and begin releasing the fruit juices.

Let the strawberry mixture macerate for 10 minutes, stirring occasionally, until the strawberries release their liquid and the flavors meld together.

Divide the strawberry-mint mixture evenly among four tall glasses, including the liquid that has accumulated at the bottom of the bowl.

Pour 1 cup of club soda into each glass, stirring gently to combine the strawberry mixture with the sparkling water.

Top each spritzer with a lime wedge and a fresh mint sprig if desired, then serve immediately over ice.
