Method

Place mint leaves and sugar in a tall glass. Gently muddle the mint to release its oils without crushing the leaves completely.

Cut the lime half into wedges and squeeze the juice into the glass with the mint and sugar, then drop the squeezed wedges into the glass.

Fill the glass with ice cubes, packing them to the top.

Pour 2 oz of light rum over the ice.

Top the glass with cold club soda or water to fill, and stir gently to combine all ingredients.

Garnish with a sprig of fresh mint and serve immediately.
