Incredible Pancakes with Strawberries
Purchased from the O'Reilly Estate in Fort Worth, Texas in 1988. Dated 1964. These are the most incredible pancakes. I tried them on my husband on his birthday and now it's a dish he requests 2 – 3 times a month.

Ingredients

Method

Combine flour and sugar in a medium bowl, stirring to blend evenly.

Whisk eggs and milk together in another bowl until well combined, then add vanilla and stir to incorporate.

Pour the egg mixture into the flour mixture and stir until just combined; the batter should be slightly lumpy.

Heat 1 tablespoon of unsalted butter in a large skillet or griddle over medium-high heat until melted and foaming.

Pour ¼ cup batter onto the hot skillet for each pancake, leaving space between them, and cook until bubbles form on the surface.

Flip each pancake and cook the second side until golden brown, about 2 minutes.

Transfer cooked pancakes to a warm plate and repeat with remaining butter and batter until all pancakes are made.

Toss the hulled and quartered strawberries with confectioners' sugar in a small bowl to coat evenly.
