Method

Combine unbleached all-purpose flour, whole-wheat pastry flour, sugar, and salt in a large mixing bowl, whisking together until evenly distributed.

Create a well in the center of the dry ingredients and pour the mild-flavored olive oil or canola oil into it.

Using a fork or pastry cutter, gradually incorporate the oil into the flour mixture, breaking up any clumps, until the texture resembles coarse breadcrumbs.

Sprinkle the ice-cold water over the mixture, 1 tablespoon at a time, tossing gently with a fork after each addition until the dough just begins to come together.

Turn the dough out onto a lightly floured work surface and gently knead 2-3 times to bring it together, being careful not to overwork it.

Form the dough into a flat disk, wrap it in parchment paper or plastic wrap, and refrigerate for at least 15 minutes before rolling or shaping.
