Preheat oven to 350°F and lightly spray a small baking dish or 8x8-inch pan with cooking spray.

Combine eggs and Sweet & Low in a mixing bowl, then beat until well blended and slightly frothy.

Melt chocolate alba according to package directions, then let cool slightly before adding to the egg mixture.

Stir the melted chocolate into the egg mixture until fully combined and smooth.

In a separate bowl, whisk together cocoa, baking powder, and baking soda.

Fold the dry ingredients into the chocolate mixture gently until just combined.

Fold in applesauce until evenly distributed throughout the batter.

Pour batter into the prepared baking dish, spreading it evenly.

Bake for 20-25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
