Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan with vegetable oil or line it with parchment paper.

In a large mixing bowl, whisk together the flour, soy flour, sugar, baking powder, baking soda, cinnamon, and salt until evenly combined.

In a separate bowl, beat the eggs and vegetable oil together until smooth and well incorporated.

Add the pumpkin to the wet ingredients and stir until fully blended and uniform in color and texture.

Pour the wet ingredients into the dry ingredients and fold gently until just combined, being careful not to overmix the batter.
