Preheat oven to 375°F (190°C).

Combine peanut flour, white flour, salt, baking powder, and sugar in a large mixing bowl, stirring well to distribute the leavening agents evenly.

Create a well in the center of the dry ingredients and pour in the melted shortening, egg, and milk.

Stir the wet and dry ingredients together until just combined, being careful not to overmix; the batter should be thick but pourable.

Lightly grease a standard muffin tin or gem pan with shortening or cooking spray.

Divide the batter evenly among the muffin cups, filling each about three-quarters full.

Bake in the preheated oven for 18-20 minutes, until the gems are golden brown and a toothpick inserted in the center comes out clean.
