Preheat the oven to 350°F (175°C). Grease a loaf pan or round cake pan with butter or oil.

Cream together the butter and sugar in a large bowl until light and fluffy, about 3 minutes, using an electric mixer or by hand.

Peel the ripe bananas and mash them thoroughly in a separate bowl until smooth, then stir in the lemon juice.

Add the well-beaten egg to the creamed butter and sugar mixture, then fold in the mashed bananas until just combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.

Gently fold the dry ingredients into the wet mixture until just combined; do not overmix, as this will result in a dense bread.

Pour the batter into the prepared pan and smooth the top with a spatula.

Bake in the preheated 350°F oven for 45 to 50 minutes, until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
