Preheat oven to 375Β°F. Line muffin tins with paper liners or grease them lightly with vegetable oil.

Combine eggs, buttermilk, and vegetable oil in a large mixing bowl, whisking together until well blended.

In a separate bowl, whisk together white flour, sugar, baking soda, and salt until evenly distributed.

Stir the Raisin Bran cereal into the egg and buttermilk mixture, allowing it to soak for 2-3 minutes until partially softened.

Pour the dry ingredients into the wet ingredients and fold together gently until just combined; do not overmix.

Divide batter evenly among muffin cups, filling each about three-quarters full.

Bake for 20-22 minutes until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
