Jordanas Banana Choc-Chip Muffins

Method

Preheat oven to 350°F (175°C) and prepare a muffin tin by lining it with paper cups or greasing the wells.

Cream together the softened butter and sugar in a large bowl until light and fluffy, approximately 2-3 minutes of beating.

Beat in the eggs one at a time, stirring well after each addition to fully incorporate.

Mash the bananas in a separate bowl until mostly smooth with some small chunks remaining for texture.

Fold the mashed bananas into the butter mixture gently until just combined.

Sift together the self-raising flour, cinnamon, and nutmeg in a bowl, then fold this dry mixture into the wet ingredients in two additions until no streaks of flour remain.

Fold in the chocolate chip cookies gently to distribute evenly throughout the batter.

Divide the batter among the prepared muffin cups, filling each about two-thirds full.

Sprinkle demerara sugar evenly over the top of each muffin for a crunchy finish.

Bake for 20-25 minutes until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
