Preheat oven to 425°F and lightly grease a muffin tin with shortening or cooking spray.

Combine graham flour, white flour, salt, baking powder, and sugar in a large bowl, whisking together until evenly distributed.

Create a well in the center of the dry ingredients and add the beaten egg, milk, and melted shortening.

Stir the mixture gently until just combined; do not overmix, as lumps in the batter are acceptable and will result in tender gems.

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Bake at 425°F for 15 minutes until the tops are golden brown and a toothpick inserted into the center comes out clean.
