Table sugar, also known as sucrose, is a disaccharide crystalline sweetener extracted primarily from sugarcane (Saccharum officinarum) and sugar beets (Beta vulgaris). It consists of glucose and fructose molecules bonded together and constitutes approximately 99.7% pure sucrose when refined. The production process involves crushing the plant material, extracting the juice, clarifying it through filtration and chemical treatment, concentrating it through evaporation, and finally crystallizing and centrifuging to produce uniform white crystals. Table sugar is the most widely used sweetener globally and is characterized by its fine granulation, bright white color, and neutral flavor that enhances sweetness without imparting additional taste notes.

Sugar beet and sugarcane varieties can produce slightly different crystal sizes and moisture contents, though these differences are minimal in the refined final product sold for culinary use.
