The bark is harvested, dried, and naturally curls into quill-like tubes as it loses moisture, creating the characteristic stick form. Ceylon cinnamon exhibits a lighter brown color, thinner walls, and a more delicate, complex flavor profile with subtle sweetness and spice notes. Cassia cinnamon, the more common commercial variety, displays a darker reddish-brown color, thicker walls, and a more pungent, aggressive spice character with pronounced sweetness. The essential oil cinnamaldehyde and other volatile compounds give cinnamon its distinctive warm, slightly woody flavor and aromatic properties.
Culinary Uses
Cinnamon sticks are used primarily for infusing beverages and broths, where they impart flavor slowly and can be removed before serving. They appear extensively in Middle Eastern, Indian, and Latin American cuisines—in mulled wines, chai preparations, rice pilafs, and mole sauces. The sticks are also broken or crushed to release more surface area for faster flavor extraction in syrups, compotes, and slow-cooked desserts.
