salt / pepper to taste

CondimentsYear-round. Both salt and black pepper are shelf-stable, processed seasonings available consistently throughout the year regardless of region.

Salt provides essential sodium and chloride for electrolyte balance and cellular function; most table salt is iodized for thyroid health. Black pepper contains piperine and other polyphenols with antioxidant and anti-inflammatory properties, though consumed in small quantities.

About

Salt is a crystalline mineral compound of sodium chloride (NaCl), obtained through evaporation of seawater, mining of salt deposits, or refinement of brine. It is the primary seasoning agent in virtually all culinary traditions and serves both flavor and preservation functions. Common varieties include kosher salt (larger crystals, less dense than table salt), sea salt (produced through evaporation of seawater, often retaining trace minerals), Himalayan pink salt (mined from ancient marine deposits), and table salt (refined and iodized for food safety). Black pepper, derived from Piper nigrum, is a flowering vine native to Kerala, India, producing peppercorns that are dried unripe green berries. Black pepper has a warm, pungent, slightly citrus-forward bite and comprises volatile oils including piperine, the compound responsible for its characteristic heat.

Culinary Uses

Salt is the universal seasoning that enhances flavor perception and balances sweet, bitter, and acidic components in food. It is used in brining, curing, and preservation; as a finishing seasoning; and as a crucial ingredient in dough and batter. Black pepper complements nearly all savory cuisines and many sweet preparations, appearing whole in stocks and braises, cracked in coarse applications, or finely ground as table seasoning. Both are essential to taste correction at the end of cooking. Salt regulates moisture in proteins and strengthens gluten development in baking, while pepper's volatile compounds are best preserved by grinding immediately before use for maximum potency.
