Salt cod, known as bacalao in Spanish and Portuguese, morue in French, and baccalà in Italian, is Atlantic cod (Gadus morhua) that has been preserved through salting and drying—a process dating back to medieval times. The cod is gutted, split lengthwise, and layered with salt to draw out moisture, then air-dried to form hard, pale fillets with a distinctive crystalline crust. The resulting product has a firm, dense texture when dried, and requires rehydration through soaking before cooking. Different regional styles exist, including the boneless, skinless fillet (most common), split fish with the backbone intact (popular in Southern Europe), and shredded forms used in specific dishes.
