The living cells are partially dried and mixed with a carrier substance (typically starch or soy flour) and anti-caking agents to produce granules that remain viable for extended periods. When rehydrated and exposed to moisture, warmth, and fermentable sugars, the yeast cells resume metabolic activity, producing carbon dioxide gas that leavens doughs and batters. Active dry yeast differs from instant or rapid-rise varieties in granule size and hydration rate—the larger granules require blooming (rehydration) before mixing into doughs, though this step is often optional in modern formulations.

Active dry yeast is the primary leavening agent in bread baking, essential for producing yeasted breads, rolls, pastries, and pizza doughs across global cuisines. It is also used in brewing, winemaking, and fermented beverage production.
