Pepitas are rich in magnesium, zinc, and plant-based protein, providing approximately 5-6 grams of protein per ounce. They are also a good source of heart-healthy polyunsaturated and monounsaturated fats, and contain notable amounts of phosphorus and manganese.

Pepitas are the hulled seeds of specific pumpkin varieties (Cucurbita pepo), characterized by their flat, oval shape and dark green coloring with a thin white shell. Native to Mexico and Mesoamerica, these seeds have been cultivated for thousands of years and are distinct from the white seeds found in common jack-o'-lantern pumpkins. The seed's flavor is nutty and subtly earthy, with a slightly sweet undertone. Pepitas have a tender texture compared to their unhulled counterparts and can be eaten raw or roasted, making them notably more versatile than traditional pumpkin seeds.

The term "pepita" derives from the Spanish word "pepitoria," referring to the small seed. True pepitas are naturally hull-free and genetically distinct from regular pumpkin seeds; however, commercially available "pepitas" sometimes include hulled versions of conventional pumpkin seeds.

Culinary Uses

Pepitas are consumed as a nutritious snack, either raw or roasted with salt and spices, and are extensively used in Mexican cuisine as a key ingredient in sauces such as pipián, where they are ground into a rich, savory paste. They serve as a garnish for soups, salads, and grain-based dishes, particularly in Latin American and Mediterranean cooking. Ground pepitas contribute body and nutty depth to baked goods, energy bars, and granola, while whole pepitas add textural contrast and visual appeal to composed dishes.
