Minute rice is a brand of instant rice that has been partially cooked and dehydrated to drastically reduce cooking time. Developed in the 1940s, it consists of white or brown rice grains that are steamed, rinsed, and dried in a specialized process that creates fissures and cracks in the grain structure. These micro-fractures allow water to penetrate rapidly during rehydration, enabling the rice to cook in approximately 5 minutes compared to 15-20 minutes for regular long-grain rice. The grains maintain a somewhat distinct texture and may appear slightly less uniform than conventional rice, though they remain relatively neutral in flavor with a mild, slightly sweet rice taste.
