Instant yeast, also known as bread machine yeast or rapid-rise yeast, is a strain of Saccharomyces cerevisiae processed to create smaller, more uniform granules than active dry yeast. The yeast cells are grown on molasses-based media, then harvested, washed, and dried through drum drying or spray drying methods, resulting in a product with approximately 5-10% moisture content and 20% dead yeast (compared to 25% in active dry yeast). This processing yields particles with higher surface area, enabling faster hydration and fermentation activity.

Instant yeast typically contains living yeast cells along with natural yeast nutrients and enzymes that survive the drying process. The granules are finer and denser than active dry yeast, with no visible hollow centers, and dissolve more readily into dough without prior blooming. The flavor profile remains consistent with other dried yeast strains: slightly yeasty and neutral, contributing minimal flavor of its own while facilitating fermentation and leavening.

Culinary Uses

Instant yeast is employed in bread baking, enriched doughs, and recipes requiring reliable fermentation with minimal proofing time. It is particularly valued in bread machines, where its rapid activation reduces overall production time without sacrificing dough development. The ingredient is standard in lean doughs (such as French bread and ciabatta) and enriched doughs (brioche, cinnamon rolls, dinner rolls). Instant yeast can be mixed directly into dry ingredients without blooming in water, streamlining the baking process. It is also suitable for sweet doughs, pizza doughs, and some pastry applications. Typically, instant yeast can be substituted 1:1 (by weight) for active dry yeast, or use about 25% less than active dry yeast by volume.
