The habanero is a hot chili pepper (Capsicum chinense) native to the Yucatán Peninsula and cultivated throughout the Caribbean and Central America. Distinctively lantern-shaped, habaneros measure 1.5 to 3 inches in length with thin, glossy skin that matures from green to orange, red, or brown depending on variety. The pepper features a fruity, citrus-forward flavor profile with sharp heat—typically 100,000 to 350,000 Scoville Heat Units—that builds gradually on the palate. While commonly associated with Mexican cuisine, particularly from the Yucatán region where the name derives from La Habana (Havana), habaneros are now cultivated globally in tropical and subtropical climates. Key varieties include the standard orange habanero, the Red Savina (intensely hot), and the milder Habanero Putah.
Culinary Uses
Habaneros are essential to Caribbean and Central American cooking, particularly in salsas, hot sauces, and marinades. The pepper's fruity character makes it suitable for both savory applications—such as Mexican cochinita pibil, Caribbean escabeche, and Belizean habanero sauce—and sweet preparations like habanero jelly or dessert glazes.
