The edible stalks are crisp, pale green to white, with a characteristic ridged exterior and fibrous texture. The flavor is mild, slightly bitter, and aromatic, with a refreshing vegetal quality. Modern cultivated celery produces thick, tender stalks suitable for raw consumption and cooking, while wild celery has thinner, more intensely flavored stalks.

Culinary Uses

Celery sticks are foundational ingredients in Western cuisine, serving as a component of soffritto, mirepoix, and holy trinity (onion, carrot, celery) aromatics that form the flavor base for stocks, soups, stews, and braises.
