Cardamom, the dried fruit and seeds of Elettaria cardamomum (green cardamom) and Amomum subulatum (black cardamom), is a perennial herbaceous plant native to the Western Ghats of southern India. The spice is composed of small, papery seed pods containing numerous small black aromatic seeds. Green cardamom pods have a pale green to brown exterior with a cooling, slightly citrusy, and complex flavor profile featuring notes of eucalyptus and mint. Black cardamom possesses a darker hue, larger pod size, and a smokier, more assertive character with warming spice qualities. Both varieties are among the most aromatic and valuable spices in international trade.
The pods are harvested before full ripeness, dried slowly over fire or in heated chambers, and may be used whole or the seeds extracted and ground into powder. Guatemala, India, and Tanzania are major contemporary producers, though India remains the primary consumer and exporter of green cardamom.
Culinary Uses
Cardamom is essential in Indian, Scandinavian, Middle Eastern, and Southeast Asian cuisines.
