Bulgur wheat is a parboiled cracked wheat product derived from whole durum wheat kernels. The wheat is cleaned, cooked (parboiled) with steam, dried, and then cracked into angular fragments of varying sizes. Originating in the Levantine region and widely used throughout the Middle East, North Africa, and Eastern Mediterranean, bulgur has been a dietary staple for centuries. It exhibits a nutty, subtly earthy flavor with a tender yet chewy texture when prepared. The grain is typically classified by size—ranging from fine (1) to coarse (4)—with fine and medium grades preferred for tabbouleh and coarser grades for pilafs and stuffed vegetables.

Unlike cracked wheat, which is uncooked and requires longer cooking times, bulgur is pre-cooked, making it quick to prepare. The production process partially breaks down the bran and germ, increasing bioavailability of nutrients while retaining much of the fiber and mineral content of whole wheat.

Culinary Uses

Bulgur wheat is fundamental to Levantine cuisine, most famously in tabbouleh, a cold salad combining bulgur with fresh parsley, tomatoes, onions, lemon juice, and olive oil. It is also essential in kibbeh (meat-filled bulgur croquettes), as a base for pilafs combined with vegetables and meats, and as a grain for stuffing vegetables such as peppers and tomatoes. The grain readily absorbs flavors and liquids, making it versatile for both hot and cold preparations. In vegetarian cooking, bulgur serves as a high-protein alternative to rice or couscous. Its quick hydration time (15-30 minutes for most grades) makes it practical for weekday meals, and it pairs well with Mediterranean herbs, spices, and ingredients including cumin, mint, and tahini.
