angel hair pasta
A good source of carbohydrates and provides energy from refined wheat semolina. When made with durum wheat, it contains some B vitamins and minerals; whole wheat varieties offer additional fiber and micronutrients.
About
Angel hair pasta, known in Italian as capelli d'angelo, is a thin, delicate pasta variety made from durum wheat semolina and water. The name derives from its fine, hair-like strands, which measure approximately 0.85–1 millimeter in diameter, making it one of the thinnest dried pasta shapes. Traditional Italian production follows the bronze-die extrusion method, which creates a porous, slightly rough surface ideal for sauce adhesion. The pasta cooks quickly—typically within 3–5 minutes—due to its slender cross-section, and has a tender, delicate mouthfeel when prepared correctly. While angel hair originated in Italy, it is now produced worldwide and remains a staple in Italian-American cuisine.
Most commercial versions are made from durum wheat semolina, though whole wheat and egg-based varieties are also available. The pale golden color of standard angel hair indicates the quality of the semolina and reflects the nutritional content of the wheat germ.
Culinary Uses
Angel hair pasta is favored for light, delicate preparations where the fine noodles can be quickly coated with minimal sauce. Its thin structure makes it particularly suited to oil-based sauces (aglio e olio), light cream sauces, and tomato-based preparations that would overwhelm thicker pasta shapes. It is commonly prepared in Italian cuisine with aglio e olio, cacio e pepe, or fresh tomato sauces, and appears frequently in Italian-American restaurants paired with seafood preparations. The short cooking time and delicate texture make it ideal for serving with butter, white wine, garlic, and fresh herbs. Angel hair should be served immediately after cooking to prevent clumping and overcooking; tossing it with sauce while still hot is essential for proper texture and flavor distribution.
