About

7UP is a lemon-lime flavored carbonated soft drink first introduced by the Howel Corporation in 1929 and now owned by Keurig Dr Pepper. Originally marketed as a hangover cure under the name "Bib-Label Lithiated Lemon-Lime Soda" due to its (now-removed) lithium citrate content, 7UP became known as the "uncola" in subsequent branding campaigns. The beverage consists of carbonated water, high fructose corn syrup or sugar (depending on market), citric acid, phosphoric acid, natural flavors (lemon and lime), caffeine-free formulation, and coloring agents that produce its characteristic clear, pale yellow appearance.

The drink is characterized by its crisp, citrus-forward flavor profile with pronounced lemon and lime notes and moderate sweetness. Variants include Diet 7UP (aspartame-sweetened), 7UP Plus (with added vitamins), and regional or limited-edition flavors. The carbonation level is moderate, providing a light effervescence that distinguishes it from competing lemon-lime sodas.

Culinary Uses

In culinary applications, 7UP functions as both a beverage and an ingredient in cooking and baking. It is commonly used in marinades for poultry and pork, where the citric acid and carbonation act as tenderizing agents while imparting subtle citrus flavor and sweetness. In desserts, 7UP is incorporated into cakes, particularly lemon cakes and upside-down cakes, where it adds moisture and a slight citrus note. The beverage also appears in gelatin-based desserts, punches (both alcoholic and non-alcoholic), and glazes for ham and baked goods. In some regional cuisines, particularly in American and Caribbean cooking, 7UP serves as a braising liquid or flavor component in savory dishes.
