Melt butter in a large pot over medium-high heat. Season the spare ribs with salt and pepper, then brown them on both sides until golden, about 5-7 minutes total.

Add the sliced onion to the pot and cook until softened and translucent, stirring occasionally, about 3-4 minutes.

Pour the water into the pot and bring to a boil. Add the bay leaf and the soaked dried mushrooms (drain them first and reserve the soaking liquid if needed).

Reduce heat and simmer for 20 minutes to allow the broth to develop flavor and the ribs to become tender.

Add the sauerkraut to the pot, stirring to distribute evenly throughout the broth. Continue simmering for an additional 15-20 minutes until the ribs are fully cooked and tender.

Taste the soup and adjust seasoning with salt and pepper as needed. Remove the bay leaf before serving.

Ladle the soup into bowls, ensuring each portion contains spare ribs, sauerkraut, and mushrooms. Serve hot.
