Ingredients

Method

Slice the broccoli or broccoflower head into small florets, keeping the stems attached for presentation as the 'trees'.

Bring a pot of salted water to a boil, then add the broccoli florets and cook until just tender-crisp, about 3–4 minutes.

Drain the broccoli thoroughly and transfer to a serving bowl while still warm.

Whisk together the water, apple cider vinegar (or rice vinegar or fresh lemon juice), sugar, and salt in a small bowl until the sugar and salt dissolve completely.

Pour the dressing over the warm broccoli and toss gently to coat evenly, ensuring the 'snow' (dressing) clings to the florets.
