Sun-dried Tomato Hummus

Method

Combine the rinsed and drained garbanzo beans, fat-free yogurt, and tahini in a food processor.

Add the garlic cloves and pulse until the mixture is roughly combined but still slightly chunky.

Add the chopped sun-dried tomatoes, dried oregano, and lemon juice to the food processor.

Blend on medium speed for 3-4 minutes, scraping down the sides of the bowl as needed, until the hummus reaches a smooth, creamy consistency with small flecks of sun-dried tomato visible.

Taste and adjust seasoning with additional lemon juice or oregano as desired. Transfer to a serving bowl and serve at room temperature with pita chips, fresh vegetables, or flatbread.
