Seitan Burger
(vegetarian Schnitzel) have a consistency similar to that of fillet and are easy to cover with breading. For the breading the usual spices for meat can be used.

Method

Prepare the seitan dough by combining gluten, soy sauce, salt, spices (such as garlic), and finely minced onions in a bowl, mixing until a firm, elastic dough forms.

Knead the dough for 3–5 minutes until it becomes cohesive and no longer sticky, adding water gradually if needed to achieve the correct consistency.

Divide the dough into 4 equal portions and shape each into a patty approximately ½ inch thick, similar in size to burger patties.

Prepare breading by combining the breading mix (salt, pepper, and optional cumin or oregano) in a shallow bowl.

Coat each seitan patty evenly on both sides with the breading mixture, pressing gently so the coating adheres.

Heat oil in a large skillet over medium-high heat until shimmering, then carefully place the breaded seitan patties in the pan.
