Ingredients

  • of Cannellini (white) beans
    2 cans
  • 3-4 tablespoons
  • of fresh tomatoes
    chopped or a tin of canned tomatoes
    2 cups
  • shallots
    sliced (or sliced onions)
    5 unit
  • of garlic
    chopped
    2 cloves
  • 1 unit
  • Half a kilo (1 lb) of spicy Sausage
    either smoked or cooked (chorizo or kabanos will do)

Method

Heat corn oil in a large pot over medium heat, then add sliced shallots and chopped garlic, stirring frequently until softened and fragrant, about 3-4 minutes.

Slice the spicy sausage into rounds or bite-sized pieces and add to the pot, cooking until the edges are browned, about 4-5 minutes.

Add the chopped fresh tomatoes (or canned tomatoes) to the pot and stir well to combine with the sausage and aromatics.

Drain and rinse the two cans of cannellini beans under cold running water, then add them to the pot.

Bring the mixture to a simmer over medium heat, then reduce heat to low and simmer gently for 15-18 minutes, allowing the flavors to meld and the liquid to thicken slightly.

Chop the fresh parsley and stir it into the stew just before serving, tasting and adjusting seasoning as needed.

Serve the bean stew hot in bowls as a hearty main course.
