Preheat the oven to 220°C (425°F).

Peel the potato and slice it into uniform ¼-inch thick fries, then place them in a bowl of cold water to remove excess starch for 5 minutes.

Drain the fries thoroughly and pat them dry with a clean kitchen towel or paper towels.

In a small bowl, combine the salt, paprika, pepper, and cayenne, then set the spice mixture aside.

Toss the dried fries with the spice mixture until evenly coated, then arrange them in a single layer on a baking sheet without overlapping.

Bake in the preheated oven for 20–25 minutes, stirring halfway through, until the fries are golden brown and crispy.
