Wash and peel the potatoes, then cut them into uniform strips approximately 1/4 to 1/2 inch thick to ensure even cooking.

Pat the potato strips completely dry with paper towels to remove excess moisture, which helps achieve a crispier result.

Arrange the potato strips in a single layer on the prepared baking sheet, making sure they are not overlapping. Lightly coat the tops of the potatoes with vegetable cooking spray.
