Open and drain the canned tuna thoroughly, then place it in a mixing bowl and flake it apart with a fork. Season the tuna mixture with your desired seasonings, such as smoked paprika, mayonnaise, salt, and pepper, and stir until well combined.

Lay the slices of white bread on a clean flat surface and spread the tuna mixture evenly over one side of each slice. Top each with a generous layer of shredded or sliced mozzarella cheese.

Heat a large skillet or griddle over medium heat and add a generous pat of butter, allowing it to melt and coat the surface evenly. Swirl the pan to distribute the butter before adding the sandwiches.

Place the assembled open-faced sandwiches cheese-side up into the buttered skillet, or close them sandwich-style and place them in the pan. Cook until the bottom slice is golden brown and crisp.

Add a small additional pat of butter to the pan and carefully flip the sandwiches, or cover the pan with a lid to allow the residual heat to melt the mozzarella fully if leaving them open-faced. Cook until the cheese is completely melted and bubbly.

Remove the tuna melts from the skillet and transfer them to a cutting board. Allow them to rest for one minute before slicing diagonally and serving warm.
