Ingredients

  • 1 cup
  • ½ cup
  • onion
    chopped fine
    1 medium
  • garlic
    minced
    1 or 2 cloves
  • water or other liquid for sauteing
    1 unit
  • your favorite barbeque sauce or vegan mustard sauce
    1 unit

Method

Rehydrate the textured soy protein by pouring ½ cup of water over it in a bowl and letting it sit for 5 minutes until fully absorbed.

Heat water or other liquid in a large skillet over medium heat, then add the finely chopped onion and sauté until softened, about 3-4 minutes.

Add the minced garlic to the skillet and cook for an additional minute until fragrant.

Stir the rehydrated textured soy protein into the skillet with the onion and garlic, breaking up any clumps with the back of a spoon.

Pour your favorite barbeque sauce or vegan mustard sauce over the mixture and stir well to coat all the soy protein evenly.

Simmer the mixture over medium heat for 10-12 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.

Toast the sandwich buns lightly if desired, then spoon the barbequed soy mixture onto each bun.

Serve immediately while hot, optionally topped with additional sauce, pickles, or coleslaw as desired.
