Bring water to a boil in a medium saucepan over high heat.

Add the nondairy margarine and cardamom to the boiling water, stirring until the margarine dissolves.

Stir in the finely chopped dried apricots and couscous, mixing thoroughly to coat all the grains.

Remove from heat, cover the saucepan with a lid, and let stand undisturbed for 5 minutes to allow the couscous to absorb the liquid.

Fluff the couscous with a fork, breaking up any clumps and distributing the apricots evenly throughout.
