Curried Couscous with Raisins

Bring the vegetable stock to a boil in a medium saucepan over medium-high heat.

Heat the margarine in a separate large saucepan over medium heat. Add the minced onion and sauté until softened and translucent, about 2-3 minutes.

Stir the curry powder and cumin into the softened onion, cooking for about 1 minute until fragrant.

Add the couscous to the spiced onion mixture and stir constantly for 1-2 minutes to lightly toast and coat the grains.

Pour the hot vegetable stock into the couscous mixture, stirring gently to combine. Season with a dash of black pepper.

Remove from heat and immediately cover the saucepan tightly with a lid. Let the couscous steam undisturbed for 5 minutes.

Fluff the couscous with a fork and stir in the raisins until evenly distributed.

Serve warm as a side dish or light main course.
