Cut the medium potatoes into 1-inch cubes and set aside.

Heat oil in a large pot or skillet over medium heat until shimmering.

Add the minced garlic and diced onion to the hot oil, stirring frequently until fragrant and the onion begins to soften.

Sprinkle the curry powder over the onion and garlic mixture, stirring constantly to toast the spices and prevent burning.

Add the potato cubes to the pot and stir well to coat them evenly with the curried onion mixture.

Add enough water to just cover the potatoes, then bring the mixture to a boil.

Reduce heat to medium-low and simmer, stirring occasionally, until the potatoes are completely tender and most of the liquid has evaporated.
