Heat canola oil in a large pot over medium-high heat. Add coarsely chopped onions and sauté until softened and translucent, about 5 minutes.

Stir in sweet paprika and cook for 1 minute, stirring constantly to release its flavor and prevent burning.

Core and chop the tomatoes into bite-sized pieces, then add them to the pot along with any juice. Stir well to combine.

Slice the pale green sweet roasting peppers into thick strips or chunks. Add to the pot and stir to incorporate with the tomato mixture.

Bring the mixture to a simmer over medium heat. Cook uncovered for 25-30 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened slightly.
