Potato Stew
Stewing is a great way to take care of left over potatoes. Potato stew goes well with sausages, meatballs, or smoked, salted or gravad fish.

- leftover boiled potatoes10 unit
- 30 ml
- dl of milk4 unitpreferably with high fat content (about 3%)

Method

Heat the butter in a large pot over medium heat until melted and foaming, about 1-2 minutes.

Add the wheat flour to the melted butter and stir constantly to create a roux, cooking for 2-3 minutes until it becomes pale and fragrant.

Gradually pour in the milk while stirring continuously to prevent lumps from forming, ensuring a smooth sauce base.

Continue stirring over medium heat until the sauce thickens, approximately 3-4 minutes.

Cut the leftover boiled potatoes into bite-sized chunks and add them to the sauce.

Stir gently to coat the potatoes with the sauce and simmer over low-medium heat for 8-10 minutes, stirring occasionally.

Season the stew with salt and white pepper to taste, stirring well to distribute the seasonings evenly.

Remove from heat and sprinkle fresh dill over the stew, stirring gently to incorporate just before serving.
