Ingredients

  • Zespri Gold (kiwis)

  • ½ unit
  • cm of peeled cucumber

  • of surimi (or mock seafood)
    70 grams
  • 1 tbsp
  • a handful of coriander leaves

  • of freshly grated ginger juice

Method

Peel and finely dice the red onion into small, uniform pieces to ensure even flavor distribution throughout the cocktail preparation.

In a small sauté pan over low heat, gently warm a drizzle of olive oil and add the diced red onion, cooking until softened and lightly caramelized to mellow its sharpness.

Remove the caramelized red onion from heat and allow it to cool completely to room temperature before incorporating it into the cocktail base.

Halve the Zespri Gold kiwifruit and scoop out the flesh, then muddle it thoroughly in the base of a cocktail shaker until a smooth pulp forms.

Add the cooled caramelized onion and a small measure of olive oil to the shaker with the kiwifruit pulp, combining the savory and tropical elements.

Fill the shaker with ice and shake vigorously for approximately 15 seconds to integrate all ingredients and chill the mixture thoroughly.
