Peel and cube the yam, then boil in salted water for 15-20 minutes until fork-tender. Drain thoroughly and allow to cool slightly before mashing.

2
Mash the cooked yam with butter or margarine and salt until smooth and lump-free. Fold in the cooked green peas, mixing until evenly distributed throughout the mixture.
5 minutes
3
Season the yam and pea mixture with additional salt to taste, adjusting flavors as needed. Allow the mixture to cool completely so it is firm enough to shape.

4
Divide the cooled mixture into equal portions and shape each one into a cylinder or patty using your hands. Work quickly and firmly to ensure the croquettes hold their form.

5
Spread the soft breadcrumbs evenly on a flat plate or tray. Roll each shaped croquette in the breadcrumbs, pressing gently so the coating adheres to all sides.

Heat oil in a deep skillet or frying pan over medium-high heat until it reaches approximately 175°C (350°F). Carefully lower the croquettes into the hot oil in batches, frying for 3-4 minutes per side until golden brown and crisp.

Remove the croquettes with a slotted spoon and transfer to a plate lined with paper towels to drain excess oil. Serve warm as a snack or side dish.
