Grate the cucumber coarsely using a box grater, then place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.

Transfer the drained cucumber to a bowl lined with paper towels and let it sit to remove any remaining moisture.

Peel the garlic cloves and mince them very finely using a knife, or crush them into a paste using a mortar and pestle.

In a large mixing bowl, combine the strained yogurt, drained cucumber, and minced garlic, stirring well to incorporate all the ingredients evenly.

Drizzle in the olive oil and stir thoroughly until the mixture is smooth, creamy, and well combined.

Taste the tzatziki and adjust seasoning as needed, adding salt or an extra clove of garlic to your preference.
