- (3/4 pound) cake firm tofu1 unit

Drain the firm tofu cake thoroughly by wrapping it in a clean kitchen towel and pressing gently to remove excess moisture; discard the liquid.

Crumble the pressed tofu into a medium mixing bowl using your hands or the back of a fork until the texture resembles coarse breadcrumbs.

Add the tahini and miso to the crumbled tofu, then stir together using a wooden spoon or sturdy spatula until well combined.

Fold in the minced scallions and grated carrot, stirring until evenly distributed throughout the mixture.

Season with 1 teaspoon of soy sauce and taste; add up to an additional teaspoon if a saltier flavor is desired, stirring to incorporate.

Add pepper to taste and mix thoroughly until the spread reaches a consistent, spreadable texture.
