Combine water, cider vinegar, and granulated sugar in a large saucepan over medium heat, stirring until the sugar dissolves completely.

Add the thinly sliced Vidalia onions to the vinegar-sugar mixture and stir well to coat evenly.

Bring the mixture to a gentle simmer and cook uncovered for 20 minutes, stirring occasionally, until the onions are tender and translucent.

Remove the saucepan from heat and allow the onion mixture to cool to room temperature.

Drain the cooled onion mixture through a fine-mesh strainer, reserving 2 tablespoons of the liquid.
