South American Steak Sauce
Especially good marinade for steaks and pork chops. Also makes an excellent marinade for steaks and pork chops.

Method

Combine the reduced sodium soy sauce, tomato paste, and distilled white vinegar in a medium saucepan, stirring until the tomato paste is fully incorporated and no lumps remain.

Add the garlic powder, cayenne powder, paprika, cumin, and sage to the saucepan, whisking to distribute the spices evenly throughout the liquid.

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.

Remove the sauce from heat and taste for seasoning, adjusting cayenne or paprika as desired for heat and flavor balance.

Allow the sauce to cool to room temperature, then transfer to a serving vessel or storage container. Serve alongside grilled or roasted steak.
