Heat oil in a medium saucepan over medium heat until shimmering.

Add the finely chopped onion and cook, stirring occasionally, until softened and translucent, about 3-4 minutes.

Stir in the chopped fresh garlic and cook for 1 minute until fragrant.

Pour in the tomato ketchup, prepared mustard, dried thyme, vinegar, and chopped celery leaves.

Stir well to combine all ingredients thoroughly.

Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, to allow flavors to meld and the sauce to thicken slightly.
