Peel and finely grate or mince the onion, then set aside to use as a flavoring base for the sauce.

In a mixing bowl, combine the tahini paste with freshly squeezed lemon juice, stirring vigorously as the mixture will first thicken before becoming smooth.

Add the minced onion, a splash of vinegar, ground cumin, and salt to the tahini and lemon mixture, stirring well to incorporate all ingredients evenly.

Gradually add cold water, one tablespoon at a time, whisking continuously until the sauce reaches a smooth, pourable, creamy consistency.
