Mojo Verde

- lightly packed fresh cilantro leaves½ cupwashed and dried
- lightly packed fresh parsley leaves½ cupwashed and dried

- sliced almonds2 tsptoasted
- French bread3 slices½-inch thick, lightly toasted and cubed
- fresh green serrano or jalapeno pepper1 unitseeded and coarsely chopped
- salt½ tspor to taste

Toast the bread cubes in a dry skillet over medium heat for 2–3 minutes, stirring occasionally, until lightly golden and crisp on the edges.

Toast the sliced almonds in the same skillet over medium heat for 1–2 minutes, stirring frequently, until fragrant and lightly browned; transfer to a plate to cool.

Combine the crushed garlic cloves, cilantro leaves, parsley leaves, and fresh green serrano pepper in a food processor or mortar and pestle, and process or grind until roughly chopped.

Add the toasted bread cubes and toasted almonds to the herb mixture, then pulse or grind until the mixture reaches a coarse, chunky consistency resembling breadcrumbs.

Stir in the diced green bell peppers, cider vinegar, and extra-virgin olive oil until well combined.

Season with salt to taste, adjusting the vinegar or oil as needed to reach the desired consistency and flavor balance.
