Combine fresh orange juice, fresh lime juice, and white wine vinegar in a medium bowl, stirring well to blend the citrus and vinegar.

Heat extra-virgin olive oil in a large skillet over medium heat until it shimmers.

Add the thinly sliced garlic cloves and finely slivered onion to the hot oil, stirring occasionally until the garlic becomes fragrant and golden but not browned, about 3 minutes.
