Sweet pongal

Sweet pongal is a sweet and buttery porridge-like dish that is traditionally prepared in South India for the Makar Sankranti festival that heralds the arrival of summer.

Ingredients

  • 1/2 cup
  • moong dhal
    1/2 cup
  • 4 cups
  • chopped cashew nuts
    1/4 cup
  • white raisins
    1/4 cup
  • 1 tablespoon
  • ghee (or substitute butter)
    1 cup
  • Jaggery
    3/4 cup
  • 1/4 cup

Method

Rinse the white rice thoroughly under cold water until the water runs clear, then drain well.

In a heavy-bottomed pot or pressure cooker, combine the rinsed rice with water and bring to a boil over medium-high heat.

Reduce the heat to medium and cook the rice until it begins to soften and the grains start to break down, stirring occasionally to prevent sticking.

Pour in the milk and stir well to combine with the partially cooked rice, then continue to cook over low to medium heat.

Simmer the rice and milk mixture, stirring frequently, until the grains fully break down and the mixture reaches a thick, creamy, porridge-like consistency.

Add the cardamom powder and stir thoroughly to incorporate the aromatic spice evenly throughout the pudding.

Continue to cook on low heat for a few more minutes, stirring constantly, until the pongal reaches your desired thick and creamy texture.
